Beetroot Soup

This clean and velvety beetroot soup is in reality delicious. It's without a doubt convenient to make and you solely need 6 ingredients.

INGREDIENTS

  • 1 medium onion, sliced
  • 2 tbsp coconut or olive oil
  • 300 g beetroot, diced
  • 100 g carrot or candy potato, diced
  • 3 cups broth or water
  • salt to taste

Optional: thyme, ginger, garlic, fennel


METHOD

  1. Fry the onion for a few minutes till it will become translucent.
  2. Add the different veggies and stir fry for two minutes.
  3. Add the broth or water, carry to a boil, then decrease the warmth and let it simmer for 20 minutes.
  4. Puree in a blender till very smooth, then return to the pot and warmth over medium fire, till favored consistency is reached.
